Baked Chutneyed Pears
This is an easy, but impressive, desert. Each serving is 1/2 pear so you can readily make as many servings as you like.
Ingredients:
Palatable Pair Piquant Pear Chutney
Bosc Pears -- ripe but firm
Dried cranberries
Butter -- slightly softened
Brandy
Halve and core pears. If preparing ahead of time, soak in water with lemon juice to prevent browning. Place pear halves rounded side down in a baking dish. Fill the centers with 1-2 tsp. of dried cranberries. Place a pat of softened butter over the cranberries. Top each pear half with a generous portion of Piquant Pear Chutney. Pour a little brandy over each one.
Cover and bake in a 350 degree oven until pears are tender. 30- 45 minutes. These can also be done in the microwave, but slower cooking allows more time for the flavors to blend.
Serve warm. You can add dollop of ice cream, whipped cream or even yogurt or whipped soft cheese. Suite your taste and use your immagination. Drizzle a spoonful of the juices over each serving.
