Chutney and Cheese Savory Mini Muffins
with
Palatable Pair Piquant Pear Chutney and Feta Cheese
Delicious little mouthfuls of exciting flavor combinations.
Ingredients
2 eggs
1/2 cup cream cheese at room temperature
1/2 crumbled Feta or goat cheese
1/2 cup + 1 Tbs Palatable Pair Piquany Pear Chytney
1 small onion diced
3/4 cup water
2 Cups self rising four
1 tsp ground gingermor garam masala
Procedure
Preheat oven to 350 degrees. Prepare 2 mini muffin pan (24 muffins each) by greasing and flouring the bottom of the muffin cups.
Blend eggs and cream cheese in a medium mixing bowl. Add the feta cheese, Palatable Pair Piquant Pear Chutney, diced onion, and water. Stir well.
Add ginger or garam masala to measured flour and sift into the wet mixture. Stir until mixture is just moist. Don't over mix. Mixture will be dense. Spoons into muffin pans.
Bake for about 20 minutes or until mini muffins are firm and golden. Serve with a side of chutney or drizzle a little Piquant Pear chutney on top of each. These little muffins make a great snack, an interesting accompaniment to a meal, a tasty hostess gift, or a treat to take to a meeting or group or club event or even to the office. They travel without falling apart and can be made ahead and frozen.
