Chutney and Cheese Savory Mini Muffins
with
Cheddar Cheese and Palatable Pair Tomato Explosion Chutney

Ingredients
2 eggs
1/2 cup cream cheese at room temperature
1/2 cup grated cheddar cheese
1/2 cup + 1 Tbs Palatable Pair Tomato Explosion Chutney
1 samll onion diced
3/4 cup water
2 Cups self rising four
1 tsp curry powder
Procedure
Preheat oven to 350 degrees. Prepare 2 mini muffin pan (24 muffins each) by greasing and flouring the bottom of the muffin cups.
Blend eggs and cream cheese in a medium mixing bowl. Add the cheddar cheese, Palatable Pair Tomato Explosion Chutney, diced onion, and water. Stir well.
Add curry powder to measured flour and sift into the wet mixture. Stir until mixture is just moist. Don't over mix. Mixture will be dense. Spoons into muffin pans.
Bake for about 20 minutes or until mini muffins are firm and golden. Serve with a side of chutney or drizzle a little Tomato Infusion Cutney on top of each. These little miffins make a great snack, an interesting accompainment to a meal, a tasty hostess gift, or a taste treat to take to a meeting or group or club or even the office. They travel without falling apart and can be made ahead and frozen.
