Ingredients
tilapia fillets
Paul Prudhomme's Blackened Redfish Magic seasoning
olive oil
lime
Generously season both sides of the the tilapia filets and let stand for 10- 20 minutes before cooking. Spray heavy skillet with Pam (if desired) and then add a little olive oil. Heat til hot and place filets in skillet. Sear on one side and turn. Lower heat to med high and let cook til done.
Squeeze a little lime juice on each fillet and plate. Add a spoon of tomato chutney on top of each fillet and serve.
